Salmon Salad

DSC00552This is a very unique salad, its simple to make and can be served as a main course for lunch or turned into a dip for starters. I was inspired to make this salad after tasting the salmon dip that is offered at J Alexander’s. While J Alexander’s salmon dip is consistently good, I tried to recreate it into a lighter version but still as yummy if not more 🙂

Salmon Salad

Serves: 2 as main course or 4 as appetizer
 
Ingredients
  • Salmon Salad
  • ½ pound baked salmon
  • ¼ C chopped red onions
  • 1 C julienned carrots
  • 1 C chopped celery
  • ½ C chopped celery leaves
  • 1 Hass Avocado diced to cubes
  • Few vegetable sticks crushed about ¼ C
  • 3 T soy sauce
  • 1 T toasted sesame oil
  • 1 T fresh lemon juice
  • ½ tsp red crushed peppers
  • salt and pepper to taste
Instructions
  1. Flake the salmon in a medium size bowl and add the rest of the ingredients and mix well. Season with salt and pepper to taste.
